Good tea asks very little of you — only attention and water at the right temperature. Follow these steps and let the leaves do the rest.
Soft, filtered water between 70–80 °C for green teas; 90–95 °C for roasted varieties.
Pour a little hot water into your kyusu or teapot first, swirl and discard. This keeps your brew temperature stable.
Use 2 g of loose leaf per 100 ml. For Matcha, sift 2 g into a warm chawan.
Green teas: 45–60 seconds. Herbal blends: 4–5 minutes. Re-steep quality leaves two or three times.
